Creamy Celery Soup

I don’t have great pictures of how to make the Creamy Celery Soup, but it’s so easy that I’m including a quick run-down here of how I made it (a worthy meal on its own!). Since this soup calls for a sheep’s milk cheese that has a lovely sharpness to it, you get this rich, creamy, satisfying flavor that’s cow dairy free! No suffering here:

Ingredients:

2 tablespoons Grapeseed oil

1 cube organic butter

2 large yellow onions, diced

2 large bunches of celery, sliced

1 bunch or package of fresh chives (approx. 5-6 tbsp)

14 cups of homemade chicken stock

1 1/2 cups Pecorino Romano cheese (made from sheep’s milk!)

Directions:

Melt the grapeseed oil and butter over medium-high heat, and sauté the onions, celery and chives until translucent. Add the chicken stock and bring to boil, then reduce to a simmer. Cream the soup in batches using a Vitamix/blender/immersion blender. Keep simmering the creamed soup for 30 minutes over low heat. Add the romano cheese and stir to incorporate fully. Serve immediately, or cool and store in 1 quart freezer bags for future use.
